Remember…planting bell peppers in the gardens. Harvesting those bell peppers and then the smell of them being burnt over an open flame. Then the process of cleaning the char off, and preparing them for dinner. Its a long process but well worth the labor and smells on a Saturday afternoon. Serve on Italian Sausage Sandwiches. A must in all Italian homes.
Roasting Bell Peppers
Ingredients
- Red and Green Bell Peppers
- foil
- paper grocery bag
- olive oil
- tomatoes
- garlic

- You can do this same process on an open flame on your grill. But, here's the indoor method. Turn your broiler on in the oven to high Cut your peppers in half and clean the insides and stems off Place the peppers on a sheet of foil and watch them blister and burn in the oven. Its important to have the skin side up as you are burning off the tart skin. Stay close as this doesn't take too long. When they are burned place them in a paper grocery bag for 20 minutes. The messy job is peeling off the burned skin and discarding it. Then cut the pepper in small pieces and sauce in a skillet of olive oil, garlic and tomatoes. Great served on Italian Sausage Sandwiches. Enjoy!
