Mom said Nano used to go to Camenzines Farm and get the fresh milk.  the milk was in large metal milk containers with metal lids.  They were stored in wholes in the ground.  Nano was so strong he would pull a full container out by himself.

On days that it was brought home fresh, the neighbor ladies would come by -door always open- and Nana would serve it to them warm in a bowl with a little lemon juice on it.

Ingredients

  • PIE FILLING
  • 4 1/2 lbs of Rogotta Cheese
  • 1 1/2 cups sugar
  • 12 eggs
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • additional cinnamon
  • CASSATA PIE DOUGH
  • 4 cups flour
  • 1/2 cup of milk
  • 1/2 cup sugar
  • 1 1/2 Tbsp baking powder
  • 2 eggs
  • 2 tsp dehydrated or fresh grated orange peel
  • 4 1/2" or 5" foil pie tins quantity unknown, guessing 2 doz.

Instructions

  1. Beat Ricotta Cheese for a few minutes. Add remaining ingredients and beat well. Set aside for later CASSATA PIE DOUGH In a large bowl with flour, cut in margarine. Add sugar stirring into the already mixed flour/margarine mixture. Add the eggs and milk mixing by hand until the dough is consistent. Roll the mixture on floured board or counter. Cut 41/2" or 5" circles out of dough. Place in sprayed tins and flute the edges of the dough. Laddie pie filling into the pie dough shells but filling no more than 3/4 of the pie tin. Sprinkle additional cinnamon on top of each pie. Cook at 350 degrees for 30-45 minutes or until inserted knife comes out pie filling clean. Let cool and then eat.
