An Easter tradition

Ricottta Cups
Ingredients
- Pastry from Biscotti, but add more flour so stiffer
- RICOTTA FILLING
- 2 lbs. ricotta
- 1 tsp cinnamon
- 1/4 cups milk
- 8 eggs
- 1/2 tsp salt
- 1 cup plus 1 Tbsp sugar
Instructions
- Roll out pastry and cut to fit individual foil cups.
- Beat with electric mixer the ricotta filling and fill cups 3/4 full. Sprinkle with cinnamon and sugar. Bake 30-45 minutes till set up in a 350 degree oven.
