Ricotta Cheese
Ingredients
- 1/2 gal goat or cow milk (whole)
- 1 1/2 Tbsp sugar
- 1 1/4 tsp salt
- 1 cup water
- 2 Tbsp white vinegar
- 1/4 cup water
- 3 Tbsp lemon juice
Instructions
- Mix last 3 together and set aside. In a six quart heavy kettle add top ingredents and cook on med heat. Stir to prevent scorching. When 198 degrees immediately add the vinegar lemon mixture and stir one time and remove from heat. Wait about 15-20minutes and gently use hand strainer and remove the ricotta cheese to a clean bowl and refr. Discard the water or use for someone that has a stomach problem. Keep refr.
