Over cooking will result in a crispy cookie, You want them to be oft so check them at 10 min. Enjoy!!

Italian Biscotti Cookies
Ingredients
- 4 eggs
- 2 sticks of margarine
- 1 1/2 cups sugar
- 5 tsp baking powder
- 1/2 cup milk
- 6 cups sifted flour
- 2 tsp vanilla extract
- 2 tsp orange extract
- 2 tsp lemon extract
- FROSTING
- 2 1/3 cups powdered sugar
- 1/4 to 1/2 tsp anise
- few drops of food coloring
- 1/3 cup water
Instructions
- Beat eggs, add sugar, vanilla, orange and lemon extract, and margarine together. Mix together just one cup of flour with the 5 tsp of baking powder then add it to the eggs, sugar, extract and margarine mix. Beat well. Add the milk gradually to the soft mixture while the mixer is running until the ingredients are mixed well together. Slowly begin adding flour to this mixture until it becomes too much for the mixer. Finish mixing by hand. roll in hands like pencils and cut into 1 1/2 inch increments. Place on greased baking shee, bake in the oven at 350 degrees for 10-15 minutes or until the bottom of the cookie becomes a light tan color.
- Frosting Put some frosting in your hand and roll the cookie until it's completely coated. Place on wax paper until the frosting becomes dry. About 45-60 minutes.
