Great desert in the fall. Can top with whip cream.

Claudia’s Pumpkin Pie Squares
Ingredients
- 1 cup sifted flour
- 1/2 cup quick cooking rolled oats
- 1/2cup borwn sugar, firmly packed
- 1/2 cup butter or oleo
- 1 1lb can pumpkin (2 cups)
- 1 13 oz can evaporated milk
- 2 eggs
- 3/4 cup sugar
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ginger
- 1/4 tsp ground cloves
- 1/2 cup chopped pecans
- 1/2 cup brown sugar, firmly packed
- 2 Tbsp butter or oleo
Instructions
- Combine first 5 ingred in mixing bowl and mix until crumbly, using electric mixer on low speed. Press into ungreased 9x13 pan. Bake 350 degrees 15 min. Combine next 8 ingred in mixing bowl and beat well. I put all of this in the blender until well mixed. Pour onto crust. Bake 350 degrees for 20 minutes. Combine last 3 ingred and sprinkle over pumpkin filling. Return to oven and bake 15-20 min or until filling is set. Cool and cut into 2 inch squares.
