Rum Fudge Pie

Brian and I were given a trip on a small sail boat in the British Virgin Isles as a wedding present.  We learned this recipe from this lovely Irish woman who was the cook and it has been one of our favorites ever since.

Add a doollop of vanilla bean ice cream for a special finish.

Ingredients

  • 8 oz. semi sweet cooking chocolate
  • 3 med. eggs
  • 3/4 cup brown sugar
  • 1/4 cup flour
  • 1/2 cup butter
  • 1/4 cup rum
  • 2 tsp instant coffee
  • 1 Tbsp boiling water
  • 1 graham cracker pie shell

Instructions

  1. Preheat oven 355 degrees Beat eggs and set aside Melt chocolate and butter in a pan on the stovetop Sir into the pan the sugar, rum, eggs and flour Microwave 1 Tbsp of water until boiling Mix instant coffee with the water to make coffee Pour the coffee into the pan and stir Pour mixture into unbaked pie shell Bake for 25 minutes Let cool a bit before serving, best served warm
