Chocolate Chip Biscotti
Ingredients
- 2 cups of flour
- 1 cup sugar
- 1 tsp baking powder
- pinch of cinnamon
- 1 cup walnuts (optional)
- 4 Tbsp cold butter
- 3 large eggs
- 6 oz,. semi sweet choc chips
- 1/4 tsp salt
Instructions
- Preheat oven to 350. In a large bowl mix flour, baking powder , salt and cinnamon. With pastry blender or 2 knives used in a scissor fashion, but butter until mixture resembles fine crumbs. Spoon 1 Tbsp beaten eggs into cup reserve. Add choc chips, walnuts, vanilla, remaining beaten eggs into flour mixture; stir until moistened. With hands kneed mixture a few times until dough forms. On floured surface with floured hands divide dough into quarters. Divide into quarters. Make each into logs. Place one log on cutting board, With serrated knife, cut warm log crosswise into 1/2 inch diagonal slices. Place slices upright 4 inches apart on cookie sheet. Repeat. Brush tops and sides with egg. Bake 25 minutes. Cool on cookie sheet on wire rack 10 minutes,. They will harden as they cool. Store in tightly covered container.
