We make this every Christmas in a bundt cake pan and sprinkle the top. We add a small nativity and a candle for each child. We sing “Happy Birthday Jesus” and all the kids blow the candles out! It has become a wonderful family tradition.

- Carrot Cake Combine first 7 ingredients: stir in eggs, oil, and vanilla, mix well. Pour batter into greased and floured round cake pans. Bake at 350 for 30 minutes or until wooden pick inserted into the middle of the center comes out clean. Cool 10 min. remove from pans and completely cool on wire racks. Spread cream cheese frosting between layers and on top.
- Cream Cheese Frosting Combine cream cheese and butter, beating until smooth. Add powdered sugar and vanilla; beat until light and fluffy.
