Tortellini with Italian Sausage Soup
Ingredients
- 1 lb. of Italian Sausage
- 1 cup chopped onion
- 2 garlic cloves
- 5 cups of beef stock broth
- 2 cups chopped tomatoes
- 8-12 oz. spaghetti sauce
- 1 1/2 cups zuchinni
- 1 carrot sliced thin
- 1/2 cup wine
- 2 Tbsp basil
- 2 Tbsp oregano
- 8-10 oz. cheese tortellini
- fresh grated parmesan
Instructions
- Saute onions and garlic till transparent in olive oil Cook sausage, drain and slice. To crock pot add all the rest of the ingredients except parmesan cheese and tortellini. Cook on low for 3-4 hrs. May be prepared up to 2 days ahead. Before serving add the tortellini and follow the package directions. Sprinkle with parmesan cheese and serve Excellent!!
