This is excellent. Mike’s sister brings this every Christmas. I don’t always measure the topping, but I do like more topping and more nuts. This is like a dessert.
Sweet Potato Casserole
Ingredients
- 3 cooked and mashed sweet potqatoes (maybe 3 or 4, 6-7" long)
- 1 cup sugar or less depending on taste
- 2 eggs well beaten
- 1 tsp vanilla
- 1/2 cup firmly packed brown sugar
- 1/4 cup flour
- 2 1/2 Tbsp melted butter
- 1/2 cup chopped pecans
Instructions
- combine potatoes, sugar, eggs and vanill, mix well and spoon into a 2 quart casserole. Combine therest of the ingredients and sprinkle on top of the potato mixture before baking. Bake 350 degrees for about 25 minutes. If making ahead of time, refrigerate and bake longer maybe 45 min to 1 hr.
